Okay. I have a few sample of vermouth from my martini development phase. (I’m getting over it)

how can I incorporate it into my cooking. French onion soup?
 
Good in cream sauces. Waaaaay back when, I worked in a restaurant that did pasta with ham and peas in vermouth cream sauce. It was a good straight down the middle pasta dish, not as heavy as it sounds. The key was to use a very mild ham (nothing overly salty), so the vermouth flavor wasn't overpowered. Parm at the end.

I bet it'd be intersting to use vermouth in...
in place of sherry in spanish recipes
Jerk chicken
Chicken roasted with potatoes, oranges, and herbs
Pork, cherries, vanilla

Recently my wife made a fantastic pea mayonaise with vermouth. Would need to look into the recipie if you're interested.

any of the above or use it to deglaze a pan, but first make sure if the stuff is palatable. I recently bought a bottle of Vermouth to use for cooking but it's way too sweet and way to little 'herby' for anything other than donating it to a wino.
