Progression of the blade and the carbon and gold handle material.
Hope gave dies mind but it liking the way it's coming together.
When I get her I'll do some onion cutting. Lol

Any thoughts on the heat-treat and hardness? I think in the k-tip chef knife 59 might be ideal. Any thoughts?

I'm thinking from what I'm told the 59 is very balanced in retention and toughness.
That's the shape before heat treat.
I’d go harder, say 63. Unless you’re breaking through turkey spines that should leave some toughness while showing that steel’s finer qualities.

I can see how custom heat treat makes a difference but honestly going against a manufacturer's recommendations can be tricky. I know from my line of work then again I know with a lot of exp you find the ideal parameters for the desired outcome. Reguardless
 
It's crazy it's almost like he didn't watch that geometry being the biggest influence for edge retention, and is now gonna have a soft thick s90v axe probably lol. I'm sure it will be great going through pigs like in forged and fire
The blade measures 1.8 mm at the thickest spine 8.4 long with a lazer grind. Not much behind the edge so that's where I'm concerned about a high HRC.
