i'm currently making some osso bucco this morning. i went around the edge and put shallow cuts. dang it if the meat isnt laying beautifully flat!!

i do it with pork chops so they dont curl. it works on shanks as well!!

thats all.

yep that works brilliantly!

Do it with Entrecote, Osso Bucco etc...
