All this talk of waiku in another thread made me itch to take out the 240 form blumbo I think?

Ugh… so sexy… I been thinking about getting a Wat / Toyama gyuto for awhile now… how does the handle and f&f feel? I have his 180mm stainless nakiri and it’s very blade forward in my opinion… wished it was a little more “balanced” and the f&f is adequate …
I like an aggressive forward balance so it's great for me. This 270 is balanced at the middle kanji character, the Toyama ho-wood D handle is quite nice but you could certainly throw a dense one on there to move balance back. F&F is meh for the price, choil needs a bit of rounding, some stray scratch marks on the migaki finish. Cuts so well I don't give a damn about any of it.

Highly recommend going migaki over KU though, the grinds are different. My KU nakiri is good but had a KU 240 gyuto and Munetoshi wiped the floor with it. This migaki is fantastic though.
 
Nice collection… but also where did you find the knife drawer holder? Can you put it in an office desk ?
I use three of these. Your drawer should be at least 3.5" deep.
I have around 3" and it's tight. Fortunately I don't care for tall knives.

Not really collecting but I do have a bunch of nice knives that don't fit in the kitchen that I should probably list...
