Picked up a few synthetics from JNS during the sale and decided to throw in a 240 tanuki. Been curious about these and I’m really into it. I enjoy finding budget sleepers and this one fits the bill. This example doesn’t have the sharp corners that I’m used to with Munetoshi (which I’m a huge fan of) so f&f in that dept is user friendly. Ootb edge is very good. Some sticking on potatoes closer to the mid & heel, easily relieved by adjusting approach (which, as a home cook under no strict time constraints, is manageable). KU has a texture and slight blue-ish sheen that makes me think tosa, but I believe these are sanjo (Mr. W?).

I think this is a great carbon beater, and it may become my new rec for those interested in a 1st Japanese carbon steel.

That is an incredibly handsome knife. That handle really suits the blade.

And I can’t wait for this one. @tostadas made my vision a reality and it looks awesome. I was originally looking for similar spalted beech, but difficult to find and expensive in a cross cut. He helped me locate spalted maple that had the same look and things evolved from there. I think it fits perfectly with the Okubo blade too.
