Shindo bunka, light use almost every day for a year and a month. That patina certainly has a personality!

Some interesting reds that come out more in person under better lighting as well, and the KU is honestly surprisingly stable.

One has circle - one does not have circle. Am I missing something here? 🤔😂
I was prepared for some circular reasoning. Fortunately the quadridigitate one provided actual info. Both my Birgs are latter circumscribed vintage. By the looks of it the early one has fairly daring forged geometry. I wonder how they differ in the subjective qualities.
 

Don't know if they still do it, but Henry's used to read on the label/can "Brewed Under the Supervision of the Brew Master". I used to think that was coolest statement ever. I envisioned the Brew Master entering in long robes and among hushed tones he is greeted with a kneel and a ring kiss by the brewery manager. :D

I also love that bottled in bond is still a thing. A bit of an anachronism, but cool that it's still a legal status for whiskey.
 
I am currently borrowing @Yoshi ’s Shihan and I realllly like it.

Shihan A2 rate amongst the top of my favorites. They would easily be my first pick for any day / any service and the last knives I would sell/trade as long as I remain in a professional kitchen.

If anyone opinions differ than mine… I’ll happily relocate yours into a new loving home/kitchen. (Mine)

I haven't gotten into westerns yet but Catcheside and Shihan are the two makers that captivate and interest me the most, super cool seeing them side by side! Makes me feel I definitely have a type going 😆

There are a few knives that I would never sell, and then there are knives that my kids know that won't be appearing in my will - they will be six feet under with me. The Shihan A2 is definitely one of them.

When you are ordering your next custom with Shihan, just ask for the SwampDonkey spec. Apparently people are already asking for Swamp spec when they are ordering from Eddworks. 😂
