Still sorting through the ARM acquisitions. Here are two Daovua knives from Tokushu, v3 with 52100 steel. I am keeping other Daovuas that suited me better.
The nakiri has been used once for test cuts, the cleaver I decided to keep unused because I ended up with too many other options in the same approximate size.
Good project knives with high quality steel if you wanna do some thinning, or just stress free beaters as is. I have found the 52100 to be very tough on other Daovua knives. No babying required.
Both knives come with edge guards.
