I will soon be the lucky recipient of a Denka 225X110 Chuka as apparently they're really hard to come by (long story). So, I'm wondering if anyone here who has used one (or similar) would be willing to share their impressions? I've never been much on cleavers but I do really like the Dama (210) and Denka (195) Nakiris that I have so just curious as to what I might expect?

Much appreciated and thanks in advance.

It will be a lot more knife and a lot heavier than your nakiris. Completely different actually, and quite chunky. Maybe you should just get rid of this chunk of metal, i can provide you with an address for that. :D Or maybe you’ll be surprised by how smooth it cuts, much better than it should, especially after spending some time on stones to refine the bevels. But even out of the box it’s a knife that can make you smile and wanting to cut more and more and more. Just make sure to get to know the basic technique for cleavers and your other rectangles might retire. Looking forward to hearing from you how you like it.

Brilliant EShin and thanks! I'm obviously not entirely sure what to expect but if I was guessing, 'chunky' is probably pretty much spot on. Weight and height aside, it will also be interesting to see how this blade is shaped at the edge, e.g., is it flat like a classic nakiri or is slightly sloped like you might find on a chef's knife so that a rocking cut is possible? I say this because I have a Denka nakiri and it is not entirely flat towards the front.

Much appreciated!
