Aizu with spots are coarser. Aizu that are blue or look like pale ikarashi are finer. This is a coarser aizu. It's like an coarser aoto but doesn't dish as fast and is much harder, but always cuts. It does need a minimal amount of water to cut fast. Too much and it slows down and cuts finer.

Aizu are also denser but slower than my ikarashi.

After 10 seconds of wide bevel sharpening on blue one, no nagura no diamond plate. Previous stone was coarse natural aoto

Grit is around 1k-3k, depending on how much water is used, and how well the stone is cleaned. Aizu have visible pores, so the edges of those pores can break off a little and release slightly coarse or faster grit. When the pores are filled with slurry after use, then the stone becomes finer

An endorsement on two fronts:

First, I have bought from refcast, and found him fun to deal with. Everything went great.

Second, there's a reason that the Aizu is commonly recommended as a great first JNat for kitchen knife users. It makes that toothy-but-keen edge we all covet.

They are recommended less often now, because they have become significantly harder to find.

It's a hard stone, so it's easy to push hard and gogue the iron cladding with any stray outside grit. Well I push on the stone too hard at least

I would be faster if I kept refreshing the surface with nagura or diamond, or used minimal water

...

After longer
...

After another two minutes
...

After 5 minutes. Some lower grit scratches left
...

More of the same after 5 more minutes. So stone condition on this seems to matter a huge amount, since it's a hard stone. It can be really fast or fine depending on the surface. It's actually more dense and fine than I initially though
