I got one night in Denver because of a layover for a wedding in July. Hopefully by then the restaurants will be back open. Any suggestions?

If you want Omakaze & look at some sweet knives you might want to look into www.foragedrestaurant.com (Chef & knife maker - Duy Pham) ... even if you can't make it to his place having chatted/got re-handles done by him / I'm sure he can give you good info/choices ... worth touching base with him IMO ...

Full disclosure I haven't been to his place but he is a hell of a nice guy to work with in terms of knife handles, blades, etc.
Some places I have been that I can recommend (but its been a while since I was in Denver) - i.e. skied there in 2018 season ... but these were the exceptional ones in my OpenTable notes.
