Hi all, I've enjoyed reading posts here on KKF about various topics (pros and cons of different blade steel, sharpening tips, etc). for years. I recently read some posts on here about Chinese cleaver selection and use, including correct cutting technique. The posts were so thorough and well written that I wanted to be able to post a thank you to the author. Thus, finally joining after years of lurking in the wings.
