This is my first full rehab of a knife to reach completion, I wish I still had some before shots of this knife, but we'll just have to go on descriptions for that portion: looked like it had been maintained with exclusively a steel for it's life and never thinned. It's lucky that it was stainless clad, the best way to describe it's previous care was "neglect, at best". In the end I re-profiled the edge, heavily thinned out the grind, replaced the handle, eased the spine and choil, hand sanded it to 400 grit for the finish, light etch on the core steel with sticky balsamic/hot coffee wash, and put an edge on it with a washita.

Final specs:
Tadafusa Santoku
Stainless clad Aogami 2
Edge length: 166mm
Height at heel: 41mm
Thickness at handle: 3+mm
Weight: 113g
Handle: Branch from a downed birch that crashed through our fence last summer w/a black walnut spacer
