First post and hello from Birmingham

Hey team, I decided to join because my knife addiction has become too much to bear and I need to start adding to the collection again after 2 years of being fiscally responsible and figured anyone invested enough to join a knife forum would have some good information to share, hopefully! Still new, but what I lack in knowledge I make up for in enthusiasm. Cheers

Welcome. Which knives have fueled your addiction so far?

The first "nicer" knife I got was a 180mm VG-10 Gyuto from Yoshihiro, that was my undisupted daily driver for a few years until I got interested in carbon and ended up finding a Caidao from Ho Ching Kee Lee and have really enjoyed alternating between the two, the difference in sharpening the stainless vs. carbon was interesting. Currently thinking about picking up a carbon Deba as I break down a decent amount of fish and that seems like as good of an excuse as any to expand the collection.
