Hey all,

What are people’s thoughts on Florentine Knives? I didn’t see a whole lot in my short search of the forums and will be finding myself in Barcelona in a few days.

Never seen one up close or handled one so I have 0 clue about performance, but I do like how they've done something different with their handle design. They really have their own unique aesthethic.
 
I’ve got a kedma Gyuto in stainless, had it for about a year now. I like it but don’t love it. Profile is nice, very nimble in hand. The handle is comfy but on the skinny side and I don’t have large hands. One of the nicer feeling stainless steels I’ve used on the stones although 90% of what I’ve used in the last 10+ years is carbon so my experience with stainless is somewhat limited.

The grind is a bit meh. Looks laser-ish from the choil but isn’t actually particularly thin behind the edge and release isn’t anything special. The heel on mine needed to be ground down a little more ootb as it had a (very small) high spot about 1-2 inches in and there was a bit towards the tip that felt quite a bit thicker than the rest.

I’m making it sound like a lemon. It’s not bad by any means. It’s comfortable, cuts well, sharpens and touches up easily. I'd consider buying another if I could look it over in person first but I probably wouldn't pay full price for one. I think I recall a post on their Instagram a while back about discounting the remaining kedma stock while they rework the line. Perhaps their standard shape performs a lot different, pity they don't make them in 240mm +.
 
Like their design but never tried them personally. Pics I've seen never convinced me to pull the trigger, looks like they have a very flat grind and not thin enough behind the edge. But who knows
 
I happened to have a short vacation in Barcelona this past week and on a chance I found that company in my searches for things to do. Without contacting them I just went there on a wednesday afternoon and was welcomed I was shown in to the office / showroom and they let me examine everything they had in stock.

I ended up buying one of their standard chef knives (F4?) in stainless steel and with a handle with red and black stripes in the handle:

Since I got home late last night I haven't really tested much, but to me a couple of carrots feel rather laser-ish in the cutting feeling and the tip is really thin makin the horisontal cuts in an onion very nice. The actual cutting edge was very sharp. It still is after one onion and two carrots.

A nice souvenir from Barcelona.

If you're in the city it's worth checking out. They also have some workshops for knifemaking and sharpening planned but nothing during my time in the city.

Sounds like a great experience! Unfortunately when I was there in August our schedule was a bit too jam packed to make it there. Probably for the better as I already spent $600+ on souvenirs throughout Spain before that…

But yeah, nice find!!
