well, typically you'd use a stiff curved boning knife for trimming a brisket so I'm looking for something that's comparable to that.

I use a 150mm petty to trim brisket. I'm only doing one at a time though, so there may be a better tool for doing cases of them.

But it works for me.

Pork ribs are not whole chickums which are not briskets. Whatcha cutting?

I quite like my Kau Kong as a one knife solution. Sharp enough for trimming and hefty enough for bone.

Especially if you alter the bevel grind along the edge, and can use different parts for different things.

(Tho it obviously isn't going to be as delicate as a purpose made knife.)

Near (or at) top of my list for all manner of outdoor cooking is the Mune Butcher. It's robust, it's got the curve, and will separate ribs or break down a grilled chicken.in a minute.

If my assumption is right and you mean this, I love it...any clue were I could pick one of those up in the US? Preferably the slicer.

I don't know if other retailers that have started offering the Mune have this one.. Add a little to the order and get free shipping. It's that good.
