What style knife would you recommend, a honesuki, garasuki, hankotsu, deba or something completely different?

well, typically you'd use a stiff curved boning knife for trimming a brisket so I'm looking for something that's comparable to that.

I use a 150mm petty to trim brisket. I'm only doing one at a time though, so there may be a better tool for doing cases of them.

But it works for me.

I really find the short blade makes trimming hard fat so much easier.

My go-to BBQ prep knife is a $30 Messermeister Four Seasons 8” breaking knife. Takes a beating and cleans up well. Just trimmed a beautiful Wagyu brisket earlier this evening.

I quite like my Kau Kong as a one knife solution. Sharp enough for trimming and hefty enough for bone.

Especially if you alter the bevel grind along the edge, and can use different parts for different things.

(Tho it obviously isn't going to be as delicate as a purpose made knife.)

My go to knife for trimming brisket is my 210mm B#2 Konosuke Fujiyama Gyuto.

That blade design looks a lot like my Henckels 4-star boning knives. I have 2 lengths and 3 knives. They are handy.

These are great suggestions....I have a Shun 6" Boning knife, much like the Desert Dawn but I'm not a huge fan of it.

Near (or at) top of my list for all manner of outdoor cooking is the Mune Butcher. It's robust, it's got the curve, and will separate ribs or break down a grilled chicken.in a minute.
