What style knife would you recommend, a honesuki, garasuki, hankotsu, deba or something completely different?
That blade design looks a lot like my Henckels 4-star boning knives. I have 2 lengths and 3 knives. They are handy.I'd recommend a western style stiff boning knife. 6-10 inches in length. I use this. 6" Straight Boning - Desert Dawn
I really find the short blade makes trimming hard fat so much easier.
