Hi.

I'd like to sell a gyuto from Stephan Fowler, for the veterans here, one of Salty's favourite.

Knife arrived last year to me from the maker, I wasn't happy with the thickness behind the edge so it has been thinned, sanded reprofiled and etched. After these works hasn't cut nor touched a stone.

Steel is "1084 15n20 600+ layers heavily moved for chatoyance".
Handle material is Amboyna burl.

198gr
Height 50.8
Thickness above heel 2.4mm, great distal taper (killer tip)
Edge length 232mm ish, misleading cause heel doesn't go straight down

Price is 750USD shipped worldwide from Australia.

Same, I love my fowler honyaki. Wouldn't let it go.

Used my Fowler yesterday and wondered if he was still making, nice knives once the edge is set

I must be going blind--I don't see a maker's mark on the knife.

Okay so I need to provide more details.

First of all, when I received the knife brand new from the maker it was thick behind the edge, as I mentioned, already by inspecting it and by cutting 1 onion it felt too thick, for my taste.
So the knife only cut 1 onion and that is it.

Which brings the discussion to the second point, the maker's mark.
The maker's mark was already faded when brand new. The thinning wasn't too big of a deal up there near the spine as the knife has already a pretty thin spine. Sanding, to prep the blade before etching, certainly made the maker's signature even more subtle, it is now barely visible. Not a big deal.
I am attaching 2 pictures of the knife brand new, along with the old choil shot before thinning.
