I have the exact same Yama. It makes terrific coffee. Some day maybe I'll find a nice Cory (even better, and much easier to clean), but for now this is fine for my occasional non-espresso urges.

The cory is much better made syphon, but they both opperate on the same principles. What is your current yama procedure?

The menu looks great. Care to tell us what we're looking at?

Also, did you find out what kind of heating elements those are? Wicked. That would be even better than butane (assuming they aren't some elaborate halogen setup built into the counter top).

They are kind of interchangeable; Corys are antiques, made in Chicago and still available on eBay, while Conas are made in the UK and still available, sold through Sweet Marias among others. Hario is another easily-available brewer.
