Having spent nearly 50 years on this earth I figure its time I bought a "real knife" (not quite Crocodile Dundee style if you know the reference!).
Hoping you can can help me with this, and that it doesnt turn my brain to mush as my first bout of research has done! Whilst I suspected it would be an incredibly complex field, I had no idea how deep this puddle would turn out to be....

Hi Ben, welcome to the forums. Yeah it is a tough one, but you came to the right place so I think you will manage to figure it out. And should the number of options bee too overwhelming, then do not hesitate to fill in the questionnaire and we will try to help.

I live not far away from it...
This could be good or bad.

On the one hand, one could get to KnS pretty easily.

On the other, one could spend a lot of money at KnS pretty easily.

KNS have only just restocked quite a few things. Shame the phone isn't answered all that often (and I'm yet to hear back on my last email) but for Australians, he has some of the best selection, service and I've been a very happy repeat customer!

Movie references aside, what characterizes the knives of Australia?
 
The questionnaire is a great way to go, but independent of that, you should consider the work of a couple of your fellow Australians, Bruce Barnet and Towball Weightman. At this stage, Bruce is a bit more accomplished than Towball, but then his price point reflect that as well. Either way, Both are good people and learned from one of the best.
 
In fact, there are a whole bunch of Aussies who make cracking good knives.

Also look out for Mert Tansu, Chadd Smith (Tristone), The Nine, Metal Monkey and our own Kippington, amongst many others.
 
Thanks everyone, what an unexpectedly huge welcome!

Apologies for not replying sooner however my youngest just got diagnosed with Whooping Cough, he is fine but quarantined however juggling looking after him whilst off school is proving very taxing for my wife and I.

On the bright side I discovered that I live in the perfect spot for this hobby / financial drain, 5 minutes from KnS and 10 minutes from Chef's Armoury (dropped by once already). I'm still researching but also about to fill out the Questionnaire and book a visit to see James at KnS. Initially I think I will start with a Gyuto from one of these two establishments before looking into local Aussie specialists, just so I get get support / knowledge first hand....but more of that in my Questionnaire. :)
