This one is an early example, and it was thinned a bit by Matus to approximate what the JKI line did eventually, moving to a thinner grind. Fantastic performer. Blue #2, Kasumi, soft carbon clad. Just before I bought this knife it went to John at JKI to go through the spa - properly had the shinogi moved up/thinned/etc to perform well. I bought it, used it for about 2 weeks in the home kitchen, and then put it in the drawer after getting the Gesshin Hide above - and forgot to take it back out, so now it's time to go. Also touched up on jnats so the finish is no longer beautiful as it was after JKI had it, but profile true to what JKI put on there. Takes an amazing edge, really a pleasure to sharpen. Light and sharp, a true laser.

Gesshin Kochi 180mm Kurouchi Kiritsuke shaped Santoku: $175

This knife is incredible. My wife prefers a Nakiri to Santoku, and that's the only reason this is being sold - one of the best cutters I've ever handled. Bought about a year ago and used at home on an end grain board, sharpened on jnats a few times but mostly light touch ups.
