Some years ago, there was a chef who appeared on Iron Chef who claimed to always use his incredibly huge Chef's knife. Anyone remember that? Anyone know what it was? Was it any good?

Having found happiness with a 270 gyuto, and eying the 300s, and having a general tendency to push anything to the extreme, I have to wonder: is there such a thing as a truly excellent, unreasonably large gyoto, like the one on Iron Chef might have been?

Big knives are better if you have the space and the skills. They are more efficient.

That knife is wild!

I'm all about the 300mm gyuto. I've got this NOS sk steel masakane and I think it's awesome. Should add I'm not a pro but there's something that just feels good about using these big knives.

I started thinking 210 was long. Then i moved to 225 as my favourite. Now 240 is all fine, as youve seen on my Raquin onion cut. Considering 270 next or 300. Is there a video of you nailing an onion with a 270+?

I like big knives and I can not lie… 33 cm Victorinox lobster knife that I bought used mostly for ***** and giggles (planning on mounting it on the wall as a conversation piece), there is little real world use for it. That Wakui 270 on the other hand… 🥰

Every time I read this thread title:

"Gigantic knife used on Iron Chef",

I feel sorry for the Iron Chef that the gigantic knife was used on. I hope it wasn't Sakai-San.

Humour aside... do you actually use this for general prep?? If so, what is it like? Is it as wedgy as you might expect or better than you'd think?
Haha nope I don't use it for general prep, it was just a joke. I have used an ai-deba in a pinch though and it was perfectly fine for everything except onions and carrots, where it wedged really really really badly. I imagine this knife would be pretty much the same in use

I wanna buy it
Funny thing is, this knife was the one no one wanted from his second to last drop. I tried to get another and I missed out. This was the only thing still available and now I believe it was the best of the bunch. Keep an eye out for future drops, Jannis seems to be making a lot of bigger knives lately.

It’s way too humongous for me, but wow that cutting video is impressive!

Much appreciated! There was a time where 200 mm felt big to me so I never would have guessed that I would enjoy a 320 mm knife. But I mostly use knives in the 230 - 270 range
