I've been a lurker on these forums for nearly 10 years, but somehow resisted creating an account until now. I no longer cook professionally, but I still appreciate good knives.
My current favorite is a 240mm Yoshikane tsuchime gyuto in SKD, but after moving house this year I feel the need to acquire a 210mm gyuto in ginsan to accommodate my slightly smaller kitchen.
