Hi there,
New member from Oregon here. I picked up some interesting knives from my dad a few years ago, and got into the idea of sharpening with water stones as a result. Of course, an interest in Japanese knives soon followed. In the beginning, I picked up a set of Shapton Pro stones (320, 1000, 5000), plus a diamond plate (150?), and I also got a Victorinox 8" chef knife to learn on.
Recently, I picked up a couple of Anryu knives (AS 240mm gyuto, W2 75mm petty) and I love them. In checking out the Anryu, my wife is now really interested, so I'm currently in the market for a nice 210mm gyuto for her, as well as at least one more petty knife.
Looking forward to learning from veteran members.
