Hi all just bought my first J knife Sakai Takayuki 33 layer Damascus 210 Gyoto. I know it's entry level stuff but I'm looking forward to receiving it then spending hundreds more on some more exciting metal.
 
Welcome W, the Takayuki is still a better entry level knife that a Shun or similar. Enjoy it.
 
For some reason Hocho Knife have cancelled my order. Back to the mine field. My knife is mainly to be used for cutting up meat, such as roasts, chicken, lamb, beef and pork boneless. Any input welcomed. Budget £150.
