My collection started with Sabatiers then moved on to Wusthof classics. I only recently started learning about Japanese knives - seems there's a whole new language to learn.

I check in every so often hoping to pick up more carbon steel blades on the trade forum.

Yes, a lot of the knives I see on the forum come with some hefty price tags. I should check the specific sections on here, but I like thin, laser type knives and really interested in trying out some aogami steel.
