I received the knives this week and just unpacked them. The edges slice newsprint cleanly but bounce off paper towels, so I’m going to try a light touchup on a 4k stone before use.

Initial thoughts - I love the well-rounded spine, and there’s some good weight to the blades. I agree with @pcs-abc above that the handles aesthetically don’t seem like a great match to the blade but that’s purely personal preference and YMMV. Looking forward to trying these guys out over the next few days.

Hi guys, unfortunately I didn’t have a chance to use these very much; I only lightly sharpened and used the smaller gyuto for one small prep.

I really liked it based on my limited use - basically one onion and some garlic. Horizontal cuts in the onion were smooth and easy; I actually expected some wedging/resistance as most of my midweight knives have issues with those cuts. So the grind appears to be thin where it counts. I’m kinda curious so I’m going to take some measurements before sending it out.

F&F holds up on closer inspection. I love how smoothly rounded the spine is, and it’s thick enough to be comfortable and add stiffness and weight to the blade. My only suggestion is that a more formal and polished handle would be a better fit for a polished honyaki - something along the lines of the finish Newham puts on his handles. But that said, I personally am more into rustic finishes with ku and tsuchime; polished honyaki appears to be Guirec’s passion, but if he ever veers into more rustic finishes I will likely be there for it.

@Vertigo is next in line but has decided to pass, so next week I’ll be sending these bad boys to @Luminaire
 
Looking back, I think the issue is I went out of order because I live near the ECG and David wanted to get them there. So I picked them up from him and passed them on to pcs-abc (back in order) as hockey was out. So I think you should be just going in reverse order on that list and im an exception. Presumably @Justinv is next if everyone between you and me on that list passed?
