Well, I bought this when JNS had their last couple of Mazakis in store. I have refinished it and given it a new handle. The new handle is cocobolo. Geometry and balance point preserved. Looking to get back what I bought it for. (I accidentally bought it, thinking I bought another knife. The confusion).

3. Birgersson gyuto

I bought this one new and have used it some. Sharpened twice. Amazing steel with great feel on the stones and excellent edge retention. Very thin grind. Came with the thinnest edge I ever experienced. Impressive stuff. Nice bocote handle.
