Hey folks, selling a nice knife from Joe/Halcyon, the type of which is getting harder and harder to find. I am the sole and only owner. Sharped once or twice, but no thinning or anything or the sort. A polishers dream here. Nice mid- to WH- type of grind, convex (not an S-grind, see choil shot), high bevel and super thin behind the edge. Nice stable patina started. This is a wrought iron clad 1.2519 core gyuto. 235mm, nice size, with specs as per below:
  • Cladding: wrought iron
  • Core: 1.2519
  • Handle: Koa with fitted copper cap
  • Blade length: 235mm
  • 50/50 grind
  • Heel height: 60mm
  • OAL: 389mm
  • Weight: 244 grams
