Hardent knives Sujihiki
240mm
235mm cutting edge
35mm height
221g weight
Picked this up about a year and a half ago. Paid too much for it($650+shipping I believe, alcohol may have been involved in the decision-making process). Was excited to try out a "new" makers work and wootz steel, also wanted a suji so this checked a lot of boxes. I can't review it as a suji as it's the only one I've had, but it works well on any proteins I put it to. Was happy with it and planned on keeping it, but won the Milan random draw suji so won't have space for this.
Looking for $300 and I'll cover US shipping or the first $20 for international.
The Good:
Really easy to sharpen and takes a great edge. The banding/patterning of the steel is gorgeous, my pictures don't do it justice at all.
The bad:
It came tipped. This was kind of a known issue with Hardent/Timo's work, in that it had happened a couple of times and he was actively working out a solution to protect them during shipping. To be fair it was a very thin tip and should sharpen out shortly.
Put a small scuff on it while sharpening it early on(was still new-ish to sharpening).
The handle is a dowel friction fit I believe, certainly seemed sturdy enough at first but one day I picked it up and was able to twist the blade in the handle. Doesn't bother me in a pinch grip. Assuming it was probably humidity-related. I'm sure a spot of epoxy or glue would sort it out but figured I'd leave it up to the new owner in case they were interested in rehandling.
