I am heading to Japan next month and need some guidance on my quest. Are there any particular shops I should be looking to visit? What knives should I try to find while I am there? Any guidance is appreciated!

In style, I am happy with a 210 or 240 Gyuto, a beautiful Bunka or a fancy Petty. I have been looking for a bread sword also.

as far as brands go, I am looking for (and sure I'm missing some on my list) --

Takada no Hamono - already reached out
Konosuke FM
Anything sharpened by Myojin

Its really more about the experience in getting something rare while I'm there, so brand or type is less of a matter. But it would be super cool to go to a guys shop and actually acquire something. I'd even do a sword...

Ill check out Ashi that was recommended in the previous post.

If it's the latter I'd recommend showing up early as his in store stock had been cleaned out when I visited in the afternoon.

Takada-san mentioned that they currently had no stock in the store, and would inform me when they did.
 
Going through kapabashi (kitchen district) in Taito city in tokyo is a lot of fun. Tons of knife shops that carry tons of varieties. Dont skip the random looking ones. You'll find gems in them! Cutlery tsubaya, kama-asa, Kamata, tokuzo, musashi. They are all in a line down the street and really fun to just walk store to store. But really you'll see some random full to the brim shops and find honyakis in a cage in the back. (Snagged a takamura uchigumo like this)

Finding Kono FM is tough. you can stop by the shop but they keep very little on hand at Konosuke, last time i went there were maybe 6-7 knifes on hand and 0 Fujiyama. Still worth a visit but the shop is small and very little going on.

The trip to Sakai from Osaka on the train is really easy, There are a few spaces that blew me away outside of the brands we all seek on here. Jikko is amazing, its like walking into a jewlery store, and just down the street from Jikko there is a knife museum. You can see chunks of tamahagane and knifes throughout history its really special. Mizuno's shop was also exceptionally impressive with a huge variety of knives on hand.

Dont skip the dontonbori night market in Osaka. Its an absolute blast of food (kobe, crab pieces, takoyaki, roasted chestnuts) and drink walking about 2 miles of food stalls. Its one of the biggest night markets in asia.

Of course! If you want any specifics or where to eat reccomendations feel free to shoot me a PM, I worked in a restaurant in Tokyo for a few months and then travelled via train for a few weeks.
 
Kama-asa has their "own" line of knives forged by either Y.Tanaka or Nakagawa. Sharpener varies but if you're lucky you might be able to catch one sharpened by Myojin. You could also shoot them an e-mail and see what they will have in stock.

check out the Sakai traditional craft museum. they showcase and sell knives from various local makers and just a cool place to visit.

i was also told that you can visit the Hado workshop if you set up an appointment.

if you're into cycling, you can also check out the shimano bicycle museum.
 
I had a lot of fun my past 2 trips checking out kappabashi for knives. Many places will let you test out knives on Styrofoam or daikon cubes.

Jikko has a beautiful showroom and knives from vg10 to Honyaki.
Musashi has many English speaking staff and I liked their store and selection too.

Dont recall many recognized or desired makers that's popular on the forums. Many pretty knives to choose from that'll be great gifts for non knife nuts. A few chef friends that's not as deep into knives gave me a few specs and asked me to choose knives for them. They were very happy with what I chose.

A little out of the way from tourist things but went to visit Teruyasu Fujiwara and got a 210 mm Denka petty. They brought out a bunch from 210-270mm for me to look at. Then they took it to the back and gave it a touch up for a more left handed edge and engraved it up front.

Like others have said, Sakai seems to be where you want to look.
Next trip I plan to focus on Osaka/Kyoto and plan to spend at least a couple half days checking out Sakai; Ashi, Baba, Hado, Sakai Knife museum etc

I’m curious why they keep a storefront if they don’t stock knives there. Is it like an office too that they do other business at?

Depending on if he’s available Nakagawa is the man and super friendly, his shop is near Sakai. He works a lot with Myojin
 
I lived in Yokohama for four years, occasionally some malls would invite knife makers to exhibit. I met Shosui Takeda at a Takashimaya location. He brought a wide selection of items and I was able to get exactly what I wanted.

Another time, a hardware store invited several natural stone dealers to exhibit and I scored two amazing finishing stones for a great price. The place is called Tokyu Hands.

It may be worth trying to find out if any malls or stores are having a special invitation for cutlery.

I’m not sure how much Japanese you can read or speak, but it is worthwhile to have a few good phrases ready to go.

Would anyone know if Takeda either sells knives, or welcomes visitors, at his establishment at Niimi, please?
