Gesshin Heiji semi-stainless 240mm Gyuto

Knife has seem light commercial kitchen use, is in great shape, touched up a few times and thinned along bevels probably once. Saya has some stains, dents and has a small crack near the "heel" where the two pieces are joined. Could easily be glued or taped. I love this knife, but I have at least 3 other workhouse gyutos (Kato, Mizuno, etc) and none of them get enough attention as a result.

Gesshin Heiji semi-stainless 210mm Petty/Suji
Very similar condition to the gyuto, light commercial use, touched up but never thinned. Saya has some dents and stains, no cracks though.

Gesshin Kagekiyo Ginsanko 210mm Petty/Suji
Great condition, lightly used (again in commercial kitchen). Some light scratches in the kasumi finish on the bevels. Small nick on the underside of the handle near the heel. Saya is in good shape.

HHH 190mm Feather Damascus Chef
A custom I commissioned from Randy back in 2012. Carbon steel (can't remember which steels tbh) feather damascus pattern, dyed buckeye burl, mammoth tooth, file work around the handle scales. The damascus pattern and wood grain do a great job mirroring each other, especially on the left (maker's mark) side of the knife. Cuts really well, profile was intended to be Shigefusa-esque and is quite nice. Obviously not the largest knife but quite versatile as a petty/chef, would look great on a meat or cheese board when entertaining. Great condition, never thinned, has some patina.

Tojiro 270mm ITK Bread Knife + Munetoshi 170mm Butcher
Trying to sell these two as a pair at the moment. Tojiro has had a fair amount of use but still has plenty of life left. Rehandle with purple dyed lacewood and copper spacers. Has some scotch-brite scuffing on the blade near the handle from the person who did the re-handle work. Munetoshi was used one, has some chipping (blade is fairly brittle) patina and the handle is a little loose.


None of these knives have been sharpened since they have been used last, which means there could be some micro-chipping or other microscopic edge defects. I am more than happy to sharpen before shipping, but I figured I would leave that option up to the buyer (I know I like restoring edges myself). Happy to provide additional photos or information upon request.

My Heiji is one of the few Japanese knives that never left my kit. Glws
 
Munetoshi sold. All reasonable offers considering for the Heijis and Tojiro.
