Hi. I came across this forum because I'm looking to buy my first Japanese knife. I've also recently purchased my first set of stones (Naniwa Professional 3 stone set), and I'm looking to learn how to use them. To be honest, all of the information I've already read about steel is a bit daunting, but I'm hoping to "hone" in on a good Gyuto in very short order.
