Fairly new to knives but love to collect anything. I'm particularly interested in stainless steel knives as I like the lower maintenance. I currently have a shun pairing knife and zwilling Kramer 8 inch chef.

Have been looking at sg2 and aeb-l lately though and hope to add some to my collection.

You'll find plenty of info here on different steels. My favorite stainless include SKD (ok semi-stainless), Ginsanko and AEBL (from someone who knows how to work it). Even VG10 can be done well - it's just not done well very often....

Who would you recommend for gimsanko and aeb-l?
