Hi all! Im a cook from Spain, I have a few japanese knives in my collection. latelly my setup is a tanaka vg10 120mm petty for hand peeling and more delicate stuff and im rotating a 180mm mcusta sg2 cleaver and suien VC cleaver, i ve followed this forum for quite some years cause of cleavers posts and i just decided to introduce myself today

there is a shop in Madrid called cuchilleria Simon they do their own knives plus they also sell japanese knives.
