I am thrilled to be part of a worldwide community of individual that share passion for knifes.
Being a professional chef, I have collected knifes over the years, for kitchen usage and learn the hard way, how Japanese steel and natural stones were functioning.
And over the years I became more familiar with the outstanding work from some of the blacksmith in Japan and supported them buying blades from time to time.
It is just amazing how the knifes are crafted and the time you'll have to wait to get the product. I am for a few months, on a waiting list with Nenohi and will get a complete knife in December 2025, a Sakai Tanzo SMS Kamagata Usuba.
I still have a lot of questions with knifes, stones and looking forward to get answers in the forum. And on the other end I have also answers by having learned myself or with other professional.

That sounds pretty cool; what made you choose Tanzo SMS for the usuba? Any info on who works with that steel?

It is similar to cowry-x (do not rust, hard metal). I believe it is forged. I do not know who is doing the work.
