I have been slowly getting way too far into the kitchen knife hobby over the past few years, gravitating pretty quickly to the chuka bocho/cai dao life, and finally decided to make a profile on this forum.
My main drivers are a mix of cleavers: a Masahiro TX-104, a Shibazi F208-2, a Dexter Russel Carbon, a Lehanh custom, a PMQ custom, and a Lila Nordanskog custom. I use them all somewhat interchangeably, but tend to really like the Lehanh and Masahiro, which both get wildly sharp with ease and have similar dimensions of 210x95ish.
I am on the hunt for a finishing stone that is essentially a larger version of a JNAT I picked up a number of years back: a triangular kiita koppa that works insanely fast and gives a great edge, but is sadly maybe 130mm along the hypotenuse at best.
Formerly I was very into straight razors, but children have put that hobby on the back burner. Thankfully, a lot of my honing stones and skills conveniently transferred over to knives pretty reasonably, but I am still learning a fair bit, especially when it comes to levels of finish (both cosmetically and as far as edge refinement vs toothiness).
