Hello everyone. I've been checking in on this forum for a few years now but never really make the plunge on high quality knives. Finally, my frustration with dull edges (my better half tosses used knives into a full sink) got the better of me. I purchased a couple Konosuke knives and store them above her reach . I have a good sharpening kit from woodworking and am trying to put it to good use following the great advice on this board. Thanks everyone for the wealth of information that I have read here.
