Hi all, have enjoyed reading the forums and finally registered instead of lurking. I'm an ex Chef of 15 years who worked his way around Montreal at the beginning of my career then moved to Vancouver working in some great kitchens for a decade until I partnered in a restaurant then sold out and moved up to the hills. In Bali now for the last 15 years and own a whisky bar and play with property. Huge fan of antique Sabatier knives and now exploring Japanese!

Stayed for a year up north in the 80's and loved it, welcome Jim. Stayed in a village west of Singaraja.

I did in past years have some Balinese paring knives as well as Chinese cleavers but never much luck with them. I do have some decent Javanese made knives that are respectable. There's a company called Kitchen knives.id that I bought a laser Gyuto from and a knife maker named Narra that I have a Santoku from that is beautiful made but not my style so I let my bartenders use it for cutting fruits to dehydrate

That's pretty cool. What characterizes Javanese knives?
