Hello guys ! I been lurking this forum years ,absolutely best place to find proper knowledge bout knives.
Im qifgt ,26y ,from finland. im passionate home cook;mostly cooking japanese ,italian and french cuisine.
+6 years japanese knife hobby behind.
I ”collect” quality cookware and kitchen stuff. Try keep it minimalistic and multifunctional as possible.
Im huge chinese cleaver guy. 4 years ago when i had cancer in spinalcord ,which lead to feet paralysis. I sold my all knives and cookware.
Now few years cooked only with cleaver and petty for safety reasons(big knife easy to handle & not chop sum fingers)
I won cancer and with miracle i learned walk again(they still cant explain this ,it should not be possible with my spinal cord injury)
I started collect cookware again and now im at: yoshikawa iron wok ,demeyere pro skillet ,staub cocotte and yukihira pot for main cookware.
Only have yoshimitu aogami 2 180mm chinese cleaver and tojiro petty atm.
Saving for hado junpaku.
This was way too long ,but have a good one.
