Hello everyone,

I'm Flo, 35 living in Paris.
I am an amateur homecook, I own a Miyabi 7000D and a Tamahagane Kyoto Santoku. (I know... its a bit stupid to own two santokus).
I have been reading this forum for a while and it's a pleasure to now be a member of it.

I think you'll find that a lot of people here have many more than one of a given knife type.

Not stupid at all! I own multiples of many knife types including three santokus and five nakiri. :)

Hang around here too much and one day you'll be looking back at that time when you only had two!

I use my santokus for _every_thing ! I should maybe buy a petty for smaller condiments though...

I also like the Santoku shape and have a couple with 16.5cm long blades. They are made from cheap Chinese steel and I keep them sharp but they do not hold their edge very well, surely your Miyabi 7000D is much better, it is a beauty
