Hi There,

for me it all started with a Shun Santoku 2 years ago, and down the rabbit hole I went... :)
I'm joining to get some more knife related knowledge and tips on my next purchases.
I also recently got my self a kamisori and started with straight razor shaving, mostly for the fun of sharpening on natural stones.

My current knife "collection":
  1. Shun classic santoku
  2. "Eden", I think shiro Kamo, Ko-bunka
  3. Kobayashi 240 Damast Gyuto
  4. Kurosaki Raijin Santoku
  5. Suncraft Kouhei-Shinmatsu ZDP-189 Petty
  6. Suncraft Kouhei-Shinmatsu ZDP-189 Kiritsuke Gyoto
  7. Fujiwara Denka Santoku
  8. Hado Junpaku 210 Gyuto
  9. Masashi Yamamoto SLD Petty
  10. unsuccessfully restorated old Usuba (Sakai Masamoto)
Looking forward to join the community :)

Hello Flo and welcome. What is the problem with number 10?
Greetings from Braunschweig
I can't form an apex/burr on long parts of the blade. I think somehow the geometry is off.
when I put a straight edge perpendicular to the blade, I see the bottom part close to the "apex" is not toughing.
I'm new to single bevel sharpening, recently I saw a video, describing that this is how it should be, and there are actually two angles.
So not I'm thinking that maybe all other parts along the blade are wrong, because they fully tough the straight edge.
Sorry I'm not used to the higane/shigane etc terminology, not sure if I have to, in order to get understood :)

Thanks everyone for welcoming me :)
Flo
