That depends if Zwillings made in Japan count or not.

If they don’t, i’d like to eventually try a carbon Robert Herder K Series. But i have not been completely satisfied with the normal german knife offerings.

If they do its a toss up between Zwillings twin cermax (discontinued) and the diplome line (also discontinued) twin cermax because zdp mirror edges are stunning. Diplome because it used to be the best pro knife around 100€, aebl was my favorite steel to use in a restaurant.
