Greetings,
I‘m new to the forum, but have been collecting and using fine kitchen knives for a couple of decades now. Started with a Henckels paring knife which I thought was the nest thing ever, and fell in love with Japanese blades about 10 years ago. I recently starting acquiring knives from American artisan manufacturers and am the proud owner of a few wonderful creations from Doghouse Forge and Monolith Knives. I‘m venturing more and more into sharpening and honing, so I look forward to learning here.
