I'm Andrew, been a chef for 15 years now time flys! Im from the uk but currently working in NZ. Looking to try out knifes from different makers.
I'm travelling light atm have a anryu gyuto, custom handle victorinox 20cm and a shun petty with me. Looking to add a sujihiki soon a wakui, custom eu knife maker or maybe a wat/toyama but not sure about the tip prefer something more pointy so can trim/skin and portion
