Hi fellow cooking knife enthusiasts!
I am buying my first Japanese knives a new Fujiwara Kanefusa FKH Series Gyuto and Misono Swedish Steel Series Santoku!
Since I am new to these types of knives, I did not want to drop $500+ for a new knife until I get the hang of using a whetstone and what not. Mostly into Asian wok cooking, BBQ, Mexican cookery and so forth. Hopefully, I made good decision on first Japanese knives.

I grew up in Santa Cruz Mountains, just 5 minutes from Los Gatos, went to high school there and had my first child at Los Gatos community hospital, man I miss that little town!!
 
Depending on when you left, you might be surprised that it is no longer a little town. The borders of LG have not changed, but the population has exploded. What happens is when an older home on a large lot is sold, 4-6 smaller dwellings are built to replace it. All orchards and agricultural land have been developed into massive complexes--and the town council wants to build more.

Ya I left in 1992 moved to Campbell then to westside San Jose eventually moved to the eastbay so I could buy a house that was affordable. That doesn’t surprise me about Los Gatos although I would have thought they could have controlled the building to keep the town more quaint, but money runs the show kinda suck though.
 
Yep, money motivates developers--and sellers--but now it's even worse, the State is also requiring all municipalities to build more affordable housing. Get this, the Town is planning to remove the downtown post office and build a high-rise of 200+ high density units. We love the east bay area b/c it's so much cooler in the summer, and we've seriously looked at moving to Oakland, Berkeley or SF.
