    Good morning,

    Would like to introduce myself. I live in Scottsdale, AZ (110 degrees tomorrow!) I've been a knife guy my whole life - picked it up from my father. I've recently become enamored with Japanese knives and just bought a Mazaki Shirogami Gyuto 210 that I absolutely love. Many more to come.

    We had a summer bit like that.

    Now that we are in the depths of winter, I would welcome a warm day, though.

    Which knives are next on the agenda?

    Nemo, not sure. There is a store less than a mile from me that caters to professionals and sells only Japanese knives. I bought my Mazaki there. They have approx. 200-300 knives on the wall and perhaps many more in the back. It's awesome as I'm able to handle them and really get a feel for what I like. I went in looking for a 210 Gyuto and the Mazaki felt just perfect. I'll spend some more time trying out different sizes and styles to see what appeals to me. I'm heading back there tomorrow as they ordered in a Finex 12" cast iron skillet for me. It's a dangerous place to hang out!

    Any suggestions?

    absolutely, or if you want to try you hand at making your own knife we could do a 1-2 day class.

    Welcome to the boards. I think I know the shop you’re talking about. Have friends in Phoenix and I sure don’t miss the AZ heat. Been about 10 years since I’ve moved from Tucson to Japan. Glad to see that there is growing interest back there.

    Thanks. The shop is in a little strip mall. It's called Knife House - they have one here and one in Portland. I went in yesterday to pick up my Finex skillet and walked out with this:

    Kurosaki AS Petty 120mm.

    Nice blade. Easy to sharpen. I have a 270mm gyuto. Just for the scallion.
