I've got a Tojiro Dp Santoku and Dp Petty 15cm running late from the Netherlands.
These will be my go to.
I'm still learning Whetstones though so I might get a Tanaka Wa when I can confidently sharpen without scratching.

Welcome to the forum! Actually, it is a very good approach (to practice on decent, yet economy knives). More experienced forum members advised me the same, but I didnt listen...Well, the result is some scratches on the damascus pattern of my first gyuto.

Already done it myself, lesson learned but thankfully not on a high end Gyuto
