Hello I’m a chef in south Florida, I sharpen, fix broke blades, refinish blades, even out grinds, and I even make handles all on the side as a hobby. I look forward to learning from the members here.
 
I like it. Good retention and just a few stropping strokes makes it happy. Can't decide if I prefer the Heiji or the new blue Wat. Heiji feels just a little heavier and that grind...... It does have a couple birthmarks on it though.

Don is good for me, shorter and still the same. Thanks for the welcome! I like to make knives look new. Before and afters are always so ridiculous that they look like a different knife, especially if bevel work is involved.
