Hi, everyone!

I'm Michi from Switzerland.
My sharpening journey started at about half a year ago, after trying to cut a big piece of smoked bacon into lots of tiny pieces with a very dull knife :)

Thanks a lot for this forum and all It's contributors!
I've already learned a lot here, and hopefully, I can give back a little every now and then.

Looking forward to hearing from you soon! :)
Stay sharp!

Michi

Welcome. What knives do you currently sharpen?
Hi there :)

My dearest knives at the moment:
Tojiro DP Gyuto, 180mm (VG10, 60HRC) ... my first ok quality kitchen knife, I like it!
Veark SK15 Santoku, 150mm (X50CrMoV15, 58HRC) ... perfect to cut big blocks of cheese with.
Kanetsune KC-920 135mm utility knife (Aogami No.2, 61-62HRC) ... cute! :)

I also sharpen dozens of normal household stainless steel knives such as Victorinox, Zwilling, ..., no name knives, from friends, neighbors and relatives. I really love sharpening them with a Norton JB6 (crystolon coarse/"fine"). It gives such a lovely aggressive edge in almost no time and holds at least a little while.
