New member here. Just thought I’d introduce myself and say hi to everyone. I’ve only recently discovered the pleasure and utility of using a good kitchen knife. I have three knives at the moment (German, Chinese, and Japanese). I love each one for a different reason. While researching my first baby steps, this forum came up repeatedly, so here I am, lurker no more :)

Haha. Yes. My wallet is already hurting. I started with a Wüsthof before quickly adding a carbon steel cleaver and a stainless-clad petty to my collection. I think I’ve got all bases covered for now… for now :)

I’m in Rutland, a tiny county near Leicester. I’m a Londoner originally. I moved here about 10 years ago but I’m thinking about moving back to London. I miss the food, the cultural variety, and the pigeons.
