Hello all,
First time participant in any Forum and I'm excited to discuss and share my love for sharpening stones and knives! I have worked with Synthetic stones for 13 years now but have just gotten into JNATS 4 years ago and there is so much to learn about them (and a very expensive rabbit hole it turned out to be). My passion and career of 13 years is being a Sushi Chef so my collection of knives are all primarily Japanese steel from Blue 1&2, Ginsan, SS ZDP and HAP 40. My Synthetic stones consist mainly of Chosera's core ranges and some JNATS: Mizukihara Uchigumori, Hideriyama, Aiiwatani, Binsui, Takashima, Shobudani, and recently added Maruoyama shiro suita.

Welcome! I'm guessing being in Sacramento that you've checked out Crocker Cutlery by now?
Thanks! I’ve heard of it but never visited. I use primarily Blue steel wide bevels and powder steel gyutos and I didn’t think they carried those items. Are they a must visit?
I make the short drive to Bernal Cutlery in SF when I can.

The higher end stuff you see online is mainly from custom western makers, but I've seen some PM stuff from a few Japanese and western makers. I still regret not snagging a Bidinger gyuto in 3v from him. It's a smaller shop compared to Bernal, but it's nice to have nearby in East Sac and worth checking out.
